Taking direction from the Universe via FF, I roasted an organic free-range chicken tonight. Stuffed the cavity with freshly snipped rosemary and thyme from the garden. Did not skimp on the butter (also organic). We’ll enjoy several meals from this “chook.”

Roast chook is Kid 2’s favourite meal. I used a French recipe for a roast chicken with tarragon a couple of months back – again, very liberal with the butter, and unusual in its positioning instructions – and it was the best roast chicken I’ve ever cooked … Not exactly exotic, but nevertheless fabulous.

Remember to make some broth with the carcass. We follow up roast chicken with tortilla soup, but the opportunities are endless.
That looks wonderful — a great foundation for several delicious meals. We’ve been eating out (or taking out) all weekend, so we’ll be glad to get back and doing something comfortable — roast chicken’s top of the list for comfort!

I love roasted chicken. Also “beer can” chicken. A while back, my sister raised some chickens and the difference in the taste between them and store bought is amazing.
